Veg Pasta Recipe

Ingredients (Serves 2-3)

200g pasta (penne, fusilli, or spaghetti)

1 cup mixed vegetables (capsicum, carrots, peas, corn)

2 tbsp olive oil or butter

3-4 garlic cloves, finely chopped

1 small onion, finely chopped

1/2 cup tomato puree

1/2 cup fresh cream or milk

1/2 tsp black pepper powder

1 tsp dried oregano

1 tsp chili flakes (optional)

Salt to taste

Grated cheese for topping (optional)

Fresh basil or parsley for garnish

Step-by-Step Method

Step 1 – Boil the Pasta

1. Fill a large pot with water, add a pinch of salt, and bring it to a rolling boil.

2. Drop in the pasta and cook according to the packet instructions until al dente (slightly firm to the bite).

3. Drain well, drizzle with a little olive oil, and toss to keep the pasta from sticking. Set aside.

Step 2 – Sauté the Vegetables

1. Warm olive oil or melt butter in a wide pan over medium heat until it shimmers.

2. Add the chopped garlic and sauté for a few seconds until fragrant and golden.

3. Stir in the onions and cook for 2-3 minutes until they turn soft and translucent.

4. Add the mixed vegetables and stir-fry for about 5 minutes until slightly tender but still crisp.

Step 3 – Prepare the Creamy Sauce

1.Mix in the tomato puree and let it cook for about 2 minutes, allowing its raw taste to mellow and the flavor to deepen.

2. Reduce the heat, pour in fresh cream or milk, and mix until the sauce turns smooth and creamy.

3. Season with salt, freshly ground black pepper, oregano, and a pinch of chili flakes (if you like it spicy).

4. Let the sauce simmer gently for 2-3 minutes until it thickens slightly.

Step 4 – Combine Pasta & Sauce

1. Add the cooked pasta to the pan of sauce.

2. Toss gently so each piece is evenly coated with the creamy mixture.

3. Cook together for 1-2 minutes to allow the flavors to blend perfectly.
