Why Vegetable Sandwich Is Perfect for Breakfast

A vegetable sandwich isn’t just tasty — it’s a smart way to start your day. Packed with fiber, vitamins, and natural energy, it helps you stay active and full for hours. It’s light on the stomach but rich in nutrition, making it ideal for both kids and adults.

Ingredients (for 2 sandwiches)

4 slices of whole wheat or multigrain bread

1 small cucumber – thinly sliced

1 small tomato – thinly sliced

1 small beetroot – boiled and sliced (optional but adds great color)

1 small onion – thinly sliced

1 boiled potato – thinly sliced

Butter – 1 tbsp

Green chutney – 2 tbsp (made with mint, coriander, lemon juice, and a pinch of salt)

Salt & black pepper – as per taste

Step 1: Prepare the Ingredients

Wash and slice all the vegetables thinly. Keep them ready on a plate. Boil the potato and beetroot in advance so they’re soft and easy to slice.

Step 2: Toast or Butter the Bread

Lightly toast the bread slices if you like a crunchy bite, or simply apply a thin layer of butter on each slice to prevent sogginess from the chutney.

Step 3: Spread the Chutney

On one slice of each sandwich, spread a generous layer of green chutney. It adds that tangy, spicy kick that makes the sandwich irresistible.

Step 4: Layer the Vegetables

Now, arrange the cucumber, tomato, onion, potato, and beetroot slices neatly. Sprinkle a pinch of salt and black pepper for taste.

Step 5: Assemble and Cut
