Ingredients:

3-4 medium-sized aloo (potatoes), peeled and cubed

3-4 tamatar (tomatoes), finely chopped

3 green chilies, slit

1-inch ginger piece, grated

½ tsp hing (asafoetida)

½ tsp haldi (turmeric powder)

½ tsp lal mirch powder (red chili powder)

1 tsp dhaniya powder (coriander powder)

½ tsp jeera (cumin seeds)

3 tbsp tel (cooking oil)

Salt to taste

Fresh coriander leaves for garnish

Step-by-Step Method:

1. Tel garam karein:

Kadai mein 2 tbsp tel garam karein. Isme ½ tsp jeera aur hing daal kar 30 seconds tak bhunein.

2. Masala taiyaar karein:

Ab grated adrak aur slit hari mirch daal kar 1 minute tak bhunein. Ye sabzi ko aromatic aur flavorful banata hai.

3. Tamatar daalein:

Chopped tamatar aur namak daal kar 5 minute tak medium flame par pakayein. Tamatar ko soft hone tak bhunein taki masala acha mix ho jaye.

4. Masale daalein:

Haldi, lal mirch powder, aur dhaniya powder daal kar achhi tarah mix karein. Masala ko thoda sa bhunne se sabzi ka taste aur enhance ho jata hai.

5. Aloo daalein:

Cubed aloo daal kar 2-3 minutes bhunein. Phir thoda pani (¼ cup) daal kar dhak kar 10 minute tak medium flame par pakayein. Aloo ko naram hone tak pakayein.

6. Garnish aur Serve:

Jab aloo pak jaye, to chopped hara dhaniya daal kar garnish karein. Garma-garam roti, paratha ya steamed rice ke saath serve karein.

Tips for Perfect Aloo Tamatar Sabzi:

Agar aapko thoda tangy taste chahiye, to 1 tsp lemon juice ya amchur powder daal sakte hain.

Sabzi ko dry chahiye to pani kam rakhein, gravy wali chahiye to thoda extra pani daal dein.
