Ingredients:
3 large eggs
2 tablespoons milk (for a soft texture)
2tablespoon chopped onion
2 tablespoon chopped tomato
1 tablespoon finely chopped capsicum (bell pepper)
Salt – as per taste
Black pepper – a pinch
1 tablespoon grated cheese (optional but yum)
A few coriander leaves (finely chopped)
½ teaspoon butter or oil
1. Take a microwave-safe mug — grease it lightly with butter or oil so the omelette doesn’t stick.
2. Crack the eggs into the mug, add milk, salt, and pepper. Whisk well with a fork until everything mixes nicely.
3. Add your chopped veggies (onion, tomato, capsicum) and mix them in.
4. Now sprinkle cheese and coriander on top.
5. Put the mug in the microwave for 1 minute on high power.
6. Take it out, stir once, and microwave again for another 30–40 seconds (until the eggs are fully cooked).
