Potatoes (Aloo) 3 medium-sized
Onion 1 large (finely chopped)
Tomato 2 medium (pureed or finely chopped)
Ginger-garlic paste 1 tsp
Green chili 1 (optional)
Cumin seeds ½ tsp
Turmeric powder ¼ tsp
Red chili powder ½ tsp
Coriander powder 1 tsp
Garam masala ½ tsp
Salt To taste
Water As needed
Fresh coriander For garnish

How to Make No Oil Aloo Curry

Step 1: Prepare the Potatoes

Wash and peel the potatoes.

Cut them into medium-sized cubes.

Boil them in a pressure cooker for 2 whistles or until soft (but not mushy). Drain and keep aside.

Step 2: Sauté Without Oil

Heat a non-stick or ceramic pan.

Add cumin seeds and dry roast for a few seconds until aroma comes.

Add chopped onions, sauté them using 2–3 tbsp water instead of oil. Stir continuously till soft.

Add ginger-garlic paste and green chili, cook for 2 mins.

Step 3: Add Tomatoes & Spices

Add pureed tomatoes and cook on medium flame.

Add turmeric, red chili powder, coriander powder, and salt.

Cook until the tomatoes become thick and masala leaves the pan.

Step 4: Add Potatoes

Now add the boiled potato cubes.

Mix well so that masala coats the potatoes.

Add 1 cup water, cover and simmer for 5–6 minutes.

Step 5: Final Touch

Add garam masala, mix and turn off the flame.

Garnish with fresh coriander leaves.

Serve hot with roti, phulka, paratha, or even plain jeera rice.
