Ingredients:
300 gms fresh paneer (crumbled or grated)2 medium onion – finely chopped
1 small tomato – finely chopped
2 green chili – chopped (optional)
2 tbsp oil or butter
¼ tsp cumin seeds
¼ tsp turmeric powder
½ tsp red chili powder
½ tsp garam masala
Salt – as per taste
Fresh coriander leaves – chopped, for garnish
1. Heat the pan:
Take a non-stick pan or kadhai. Add oil or butter. Let it warm slightly on medium flame.
2. Add cumin & onion:
Once the oil is hot, add cumin seeds. When they crackle, toss in chopped onions.
Sauté till they turn golden and soft — that’s where the flavor begins
3. Add tomato & spices:
Add chopped tomatoes, turmeric, red chili powder, garam masala, and salt.
Cook for 2–3 minutes till the tomatoes soften and the masala leaves a little oil.
4. Add paneer:
Now add the crumbled paneer. Mix gently so it blends with the masala but doesn’t lose texture.
Cook for 2–3 minutes on low flame. Don’t overcook — soft paneer is the secret to great bhurji!
5. Finish it off:
Sprinkle fresh coriander leaves and give it one final stir.
