Ingredients You Will Need (Serves 4–5 People)

1 liter full cream milk – this gives the dessert a rich, creamy base.

1 cup thin vermicelli (seviyan) – roast lightly until golden for the best flavor.

½ cup sugar – you can adjust the sweetness as per your taste.

7–8 seedless dates – finely chopped to add natural sweetness and texture.

10–12 cashew halves – for crunch and richness.

10 almonds – sliced thinly.

7–8 pistachios – chopped for garnish and flavor.

10 raisins – optional, but they add a nice sweetness when cooked.

2 tablespoons ghee (clarified butter) – for roasting and aroma.

½ teaspoon cardamom powder – to bring a warm, festive fragrance.

1 teaspoon kewra water or rose water – optional, for a delicate floral aroma.

 

Step-by-Step Method

Step 1: Prepare the Dry Fruits

Chop the dates into small pieces.

Slice or chop almonds, cashews, and pistachios.

These nuts add richness and give Sheer Khurma its royal taste.

Step 2: Roast the Vermicelli

Heat 2 tablespoons of ghee in a heavy-bottomed pan

Add the vermicelli and roast until golden brown.

Roasting is important to prevent the vermicelli from becoming sticky.

Step 3: Boil the Milk

Pour the milk into a deep, heavy-bottomed pot. Heat it on medium flame and bring it to a gentle boil. Once it starts boiling, lower the heat and let it simmer for about 10–12 minutes. Stir occasionally to prevent burning. By this time, the milk will turn slightly thick and creamy.

Step 4: Cook Vermicelli in Milk

Add the roasted vermicelli into the hot milk.

Cook for 7–8 minutes until the vermicelli softens and blends well with the milk.
